With 20 distinctive but overlapping styles, Caribbean Cuisine reflects an eclectic mix of cultural influences. Traditions and techniques brought by travellers, colonialists & settlers led to a fusion of African, Amerindian, European, East Indian, Arab and Chinese creating styles and tastes unique to the region.

Common ingredients are rice, ackee, plantains, beans, breadfruit, cassava, coriander, bell peppers, calalloo chick peas, tomatoes, sweet potatoes and coconut. Green seasoning - an herb and oil mix which can include coriander, marjoram, oregano, scotch bonnet peppers, green onions, garlic and celery – impart a flavour profile that defines Caribbean cuisine.

Fourteen plus recipes including Cuban Tostones, Trinidadian Pelau Rice, Jamaican Ackee & Tofu. Mock Jerk Chicken, Pepperpot Stew & Grenadian Oil Down teach the essential techniques and flavourings of the region and introduce you to a host of unfamiliar ingredients.


THIS COURSE IS SUITABLE FOR VEGANS. 12 MAY WORKSHOP IS GLUTEN FREE FOR COELIAC WEEK.
